I will attach my used mods along with my settings but the only version of yuzu that doesn't crash on my rig ... I think I might have found the solution. Turns out there were some extra files in Yuzu's "keys" folder that were not suppossed to be there. All I left was the "prod.keys" file and everything went smooth after that. For some reason, those extra files allowed to install every other DLC except for Byleth. Hope this helps someone with the same issue.
